One of the first things to look at when piecing two very different colors of fabric, is to ask: Is one color more dominant than the other? It's usually best to match the background of the fabric.
If the both colors are solid, and you have an equal amounts of white and black, then it really doesn't matter which thread color you use to piece with.

If you are using a black thread, unless the tension is perfect, the bobbin thread may poke through and show a little on the white fabric.
If you are using a white thread, unless the tension is perfect, the bobbin thread may poke through and show a little on the black.
